Dish
recipes that use cardamom
Cardamom is very easily used in both drinks (coffee, tea) and in food,
similar to any other condiment. Any dish containing cardamom helps you
feel better, having a good mood, a better state of mind, both physical
and mental. Some of the usual consumers of this condiment pretend it
is also about the aromas it contains and its effects. Actually, aromatherapy
keeps gaining ground in Western civilization. Well, enough said, let
us see 2 food recipes:
1. Cow tongue: This recipe is proposing a regular Plant
Assembly.
Ingredients: 1 cow tongue, clove, cinnamon, salt, pepper, aprox.
500ml of vinegar, 6 cloves of garlic, one midsized onion, one spoon
of cankered cardamom, two carrots, lemon and orange skin, aprox 15grams
of sugar, some parsley, some celery.
Cooking: Wash the tongue and make some surface cuts in
which you should put the garlic and clove. Put the tongue now in a bowl
and add the vinegar. Then, add salt, pepper, cinnamon, cardamom, the
onion (cut in small pieces), the sliced carrot (very, very thin slices),
the lemon and orange skin, the parsley and the celery, all on your taste.
Cover the bowl with a cloth and put it in the refrigerator for about
6 hours. From time to time, turn the tongue, in order for the condiment
to fill the tongue. After those 6 hours, put the entire mix in a pan
and let it boil. When we consider the tongue is boiled enough, we take
it out and we clean it from all the peelings. We press it for a couple
of hours, and then you should slice it and serve it as slices, as an
appetizer. You can ornate the dish with leaves of salad, tomatoes and
more.
2. Chestnut chicken:
Ingredients:
A midsized chicken, 500grams of chestnuts, 500grams of hushed meat,
a glass of peeled mushrooms and cut in small bits, 2 big spoons of oil,
pepper, cardamom beads and salt, coconut powder.
Cooking:
Start by baking the chestnuts. When they are fried enough, peel them
and take the pulp and crush it. Mix the crushed chestnuts with the hushed
meat and the mushrooms. In this mix, add salt, pepper and coconut powder.
Put it on fire, for about 15 minutes, adding the oil. In the meanwhile,
prepare the chicken, by washing it, putting it through corn flour and
then washing it again. Let the water go and fill the chicken with the
mix you prepared. Sew the gap with white thread. Fry the chicken in
oil until it is all fried. Then, add water, salt and pepper and let
it boil on small fire. Then, when it is closing boiled, add some cardamom
seeds, on your taste. As a garnish, use boiled carrots, potatoes, rice
and more.
