Rhubarb recipes:

At least 30 culinary recipes based on the rhubarb are known, many of them being totally natural. We present here some recipes that can be used frequently in the kitchen.

1. Rhubarb soup
This food is easy to prepare.
Ingredients:
We shall use about 600 grams rhubarb leaf stalks, 60 – 75 grams wheat flour, 125 – 150 grams butter, one teaspoon of sugar, 2 eggs, 200 -250 ml milk, salt according to taste. We cut the rhubarb leaf stalks in pieces of about 2 – 3 cm and we set them to boil, leaving them to boil for about 10 minutes (more if needed).
Cooking:
During this time we prepare a mixture of scrambled egg, flour, milk, sugar, butter, salt and we put it aside. We remove the leaf stalks from the boiling water, we let the water drain from them, after which we mince them and pass them through a sieve not very thick. We set the resulted paste to boil again and we add a cup of hot water. We add the mixture obtained from the other ingredients after which we mix it well and let it boil another 5 – 10 minutes. According to taste we can add salt or another spice.

2. Rhubarb pie

Ingredients:
It is a white-green preparation extremely tasty. We need 300 ml milk, about 125 – 150 g semolina, 125 -150 g sugar, 2 eggs, 750 g sponge cake dough, 400 g rhubarb leaf stalks, 2 teaspoons powdered sugar.
Cooking:
We prepare the sponge cake dough, from which we make a layer that we put into the griddle. We leave the dough to rest, time in which we prepare the semolina with milk. After the semolina is cooled at the room temperature, we mix it with the preparations out of egg and sugar (the whites made into foam, yolks mixed with sugar). What is obtained is poured over the layer of dough. Over it we sprinkle the rhubarb leaf stalks that were previously minced or cut finely. We put the griddle into the oven. When the baking is over, we bring out the pie from the oven and we let it cool. We sprinkle powdered sugar and decorated like this it can be consumed.

3. Fortifying drink

Ingredients:
It’s a drink in which other ingredients can be added. The base recipe is a teaspoon of instant coffee, 2 teaspoons of natural honey, one teaspoon of cocoa, a glass of rhubarb juice.
Cooking:
All the ingredients are mixed. For decoration and taste improvement two or three teaspoons of sweet cream should be added. According to taste a teaspoon of honey can be added, if the taste of rhubarb is to strong than we will use half of glass of water and half of glass of juice.

4. Rhubarb salad

Ingredients:
We use 300 g rhubarb leaf stalks, 200 g grinded apples, 3 medium apricots; o can of pineapple, orange or mandarin compote, a spoon of rum. Also strawberries can be used, cherries or other season fruits. In need also fruit from compote can be used.
Cooking:
Beforehand the stalks are boiled we let the water drain from them and we mince them. We mix the rhubarb mince with the cleaned and sliced fruits. We add the rum, we cover the container and we set it in the refrigerator for 2 – 3 hours. We serve this salad in cups. We decorate it with sweet cream. We can also add a chocolate sauce or a teaspoon of honey.
